These onions are really a great treat. We push out the core, and stuff it with a bit of red or green jalapeno pepper. Then we place pack the onion in vinegar and sea salt brine with the core facing to the outside so that you can see our work. This very tedious work is so beautiful, that once you purchase the jar, you probably won’t want to disturb the design to eat the wonderful hot onions in the jar. But do, because they are truly delicious.
