Featured Oil: Dill Extra Virgin Olive Oil (or sub with Fresh Garlic Extra Virgin Olive Oil for a bite!)

Featured Vinegar: Dill Pickle White Balsamic (or sub with Mojito, Watermelon or Basil White Balsamic)

1. In a bowl, mix:

    • 1/2 cup cucumber, grated
    • pinch of salt

2. Let the cucumber and salt sit for at least five minutes. Quickly rinse, and then place the cucumber in a clean towel (or strong paper towels) and squeeze out the excess water.

2. In a medium bowl, mix together:

    • Grated cucumber
    • 1 cup thick, whole milk Greek yogurt (can sub coconut yogurt)
    • 1 TBS fresh lemon juice
    • 1/2 TBS Dill Pickle White Balsamic
    • ½ TBS Dill Extra Virgin Olive Oil
    • 1 garlic clove, grated
    • ¼ teaspoon sea salt
    • 1 tablespoon chopped fresh mint, optional

3. Drizzle more olive oil on top for added flavor and garnish. Enjoy on a sandwich or with chips!
